    IS BAKING WITH OAT FLOUR GOOD FOR CLEAN EATING?

    Baking with oat flour is a great idea if you're trying to eat a clean eating diet. Oat flour produces a soft and tender crumb to most baked goods and tastes delicious. You'll have a mild, slightly nutty flavor to your baked good and notice a delicious depth of flavor to all your homemade treats.

    RECIPE INGREDIENTS

    • Oat flour 
    • Oat Milk
    • Maple Syrup
    • Coconut Oil
    • Vanilla
    • Baking Powder
    • Salt

    INSTRUCTIONS

    1. Combine honey, oat milk, coconut oil, and vanilla in a bowl.
    2. Stir in oat flour, baking powder, and salt.
    3. Mix until batter is well mixed.
    4. Pour batter into a microwave-safe bowl or coffee mug.
    5. Microwave for 60-90 seconds until the cake is set. Be sure not to overcook your baked oat cake.

    RECIPE SUBSTITUTIONS

    OAT FLOUR 

    All-purpose flour or whole wheat flour can be used. 

    OAT MILK

    Dairy or any plant-based milk can be used. 

    GLUTEN-FREE

    Oats are naturally gluten-free but may be processed near other foods containing gluten. Look for oat flour or oats that are certified gluten-free. 

    COCONUT OIL 

    Butter or olive oil can be used in place of coconut oil. 

    BATTER ADD-INS 

    Feel free to add up to 1 tablespoon of the following to your carrot cake batter before baking. 

    • Coconut
    • Chocolate chips
    • Peanut butter chips
    • Chopped dates
    • Peanut butter or any nut butter
    • Sprinkles

    MUG CAKE TOPPINGS

    • Homemade cinnamon whipped cream
    • Ice Cream
    • Macerated strawberries
    • Cream cheese, vanilla, or chocolate frosting
    • Dash of cinnamon
    • Coconut flakes
    • A drizzle of honey or maple syrup
    • Vanilla Yogurt
    • Sprinkles
    • Chocolate Chips
    • Chocolate Frosting
    • Fresh berries
    HOW DO YOU BAKE A MUG CAKE IN THE OVEN?

    What do you do if you don't have a microwave but don't have a microwave to cook your mug cake or prefer not to cook with one? Simply follow the recipe instructions then bake your mug cake in an oven-safe dish and bake at 350 degrees Fahrenheit for about 6-8 minutes or until a toothpick comes out clean. Cooking times may vary depending on the size of dish you're using to bake your cake.

    EXPERT TIPS

    MICROWAVE COOKING TIME

    Microwaves may vary in their cooking time based on the power they output. Here are a few tips to make your mug cake a success:

    • Set your microwave on high and cook for 60 seconds. If your cake is set, take it out and let it cool slightly, add your toppings, and enjoy!
    • Mug cakes can easily become over-baked and dense. You want your cake to be moist and slightly sticky on top, but not a gooey cake batter consistency. 
    • If your cake is not quite set after 60 seconds, cook it for 20 more seconds and recheck. Still not set? Cook for 10 more seconds. You can easily overcook your mug cake, so be cautious when adding additional cooking time. 
    • Mug cakes will rise while cooking in the microwave and then settle once it begins to cool.

    Ingredients
      

    • ½ cup oat flour
    • 2 tablespoons maple syrup
    • ⅛ teaspoon salt
    • ½ teaspoon baking powder
    • 2 tablespoons honey
    • 4 tablespoons oat milk
    • 1 ½ tablespoon coconut oil melted
    • 2 teaspoons vanilla

    Instructions
     

    • In a small bowl mix together oat flour, salt, and baking powder
      ½ cup oat flour, ⅛ teaspoon salt, ½ teaspoon baking powder
    • Stir in maple syrup, oat milk, vanilla, and coconut oil.
      2 tablespoons honey, 4 tablespoons oat milk, 1 ½ tablespoon coconut oil, 2 teaspoons vanilla
    • Once ingredients are mixed well, pour cake batter into a microwave safe mug or dish.
    • Cook mug cake in the microwave for 90 seconds. Some microwaves cook differently than others you may need to adjust your cooking time.
