    Healthy Honey Mug Cake

These little mug cakes couldn't be any easier to whip up and call for just a few healthy, whole-food, basic ingredients. They are gluten-free, dairy-free, and made with no processed sugars.

    This gooey, spongey honey cake is such a tasty treat to enjoy warm right out of the microwave. There are many options for add-ins to your cake batter, and the toppings are endless. And, since this is a personal-size cake, you don't have to worry about overindulging.

    OAT FLOUR MUG CAKES

    I love making mug cakes with whole grain oat flour. I've found that mug cakes turn out with more of a soft and tender texture than when baking mug cakes with traditional all-purpose or whole-wheat flour.

    And, since oats are naturally gluten-free, this is the perfect mug cake for anyone who not only wants to eat healthier but needs a gluten-free dessert too!

    INGREDIENTS

    • Honey
    • Oat flour 
    • Cinnamon
    • Egg
    • Coconut Oil
    • Vanilla
    • Baking Powder
    • Salt

    INSTRUCTIONS

    1. Combine honey, egg, coconut oil, and vanilla in a bowl.
    2. Stir in oat flour, baking powder, cinnamon, and salt.
    3. Stir until batter is well mixed.
    4. Pour batter into a microwave-safe bowl or coffee mug.
    5. Microwave for 1 ½ - 2 minutes until the cake is set. Be sure not to overcook your baked oat cake.

    RECIPE SUBSTITUTIONS

    OAT FLOUR 

    All-purpose flour or whole wheat flour can be used. 

    LOW-FAT 

    For a lower-fat honey mug cake, use 2 egg whites in place of the 1 whole egg. 

    VEGAN 

    For a vegan option, use one flax or chia egg in place of the egg.

    GLUTEN-FREE

    Oats are naturally gluten-free but may be processed near other foods containing gluten. Look for oat flour or oats that are certified gluten-free. 

    COCONUT OIL 

    Butter or olive oil can be used in place of coconut oil. 

    BATTER ADD-INS 

    Feel free to add up to 1 tablespoon of the following to your carrot cake batter before baking. 

    • Almonds
    • Walnuts
    • Pecans
    • Coconut
    • Chocolate Chips
    • Chopped Dates
    • Peanut Butter
    • Cacao Nibs

    MUG CAKE TOPPINGS

    • Homemade cinnamon whipped cream
    • Cream cheese frosting
    • Pecans
    • Walnuts 
    • Dash of cinnamon
    • Coconut flakes
    • Sliced almonds
    • Chopped pecans
    • Chopped walnuts
    • Extra honey and cinnamon

    CAN YOU BAKE MUG CAKES IN THE OVEN INSTEAD OF A MICROWAVE?

    Baking your honey cake in an oven will take more time, but it will also provide a more traditional cake-like texture. Simply pour your cake batter into an oven-safe dish and bake at 350 degrees Fahrenheit for 8 minutes or until a toothpick comes out clean. Cooking times may vary depending on the size of dish you're using to bake your cake.

    EXPERT TIPS

    MICROWAVE COOKING TIME

    Microwaves may vary in their cooking time. Start with 60 seconds and adjust as needed. Cook longer for a more cake-like brownie and shorter for a more moist texture. The texture of a honey mug cake should be almost like a sticky toffee pudding.

    Ingredients
      

    • ⅓ cup oat flour
    • ½ teaspoon baking powder
    • ¼ teaspoon salt
    • ½ teaspoon cinnamon
    • 2 tablespoons honey
    • 1 egg
    • 1 tablespoon coconut oil melted
    • ½ teaspoon vanilla

    Instructions
     

    • In a small bowl mix together oat flour, cinnamon, salt, and baking powder
      ⅓ cup oat flour, ½ teaspoon baking powder, ¼ teaspoon salt, ½ teaspoon cinnamon
    • Stir in honey, egg, vanilla, and coconut oil.
      2 tablespoons honey, 1 egg, 1 tablespoon coconut oil, ½ teaspoon vanilla
    • Once ingredients are mixed well, pour cake batter into a microwave safe mug or dish.
    • Cook mug cake in the microwave for 90 seconds. Some microwaves cook differently than others you may need to adjust your cooking time.
