    Incredibly Moist Carrot Mug Cake

    This incredibly moist carrot mug cake is a delicious treat that is an easy dessert recipe for one and ready in just a couple of minutes. Made with simple, whole-food ingredients like oat flour, freshly grated carrots, molasses, and generous on the cinnamon; this is the perfect personal-size late-night indulgence. 

    With spring just around the corner, these single servings made from scratch carrot cakes have been on my mind. They are tender, sweet, and perfectly spiced. And, since they are a dessert made for one, or two, there’s no risk of overindulging.

    And, since this carrot cake is made with oat flour, it’s naturally gluten-free and healthier than traditional mug cakes. You won’t find any processed sugars in this recipe either.

    INGREDIENTS

    • Finely shredded carrots
    • Oat flour 
    • Molasses
    • Cinnamon
    • Egg
    • Coconut oil
    • Vanilla
    • Baking powder
    • Salt

    INSTRUCTIONS

    1. Combine egg, coconut oil, vanilla, molasses, and shredded carrots in a bowl.
    2. Fold in oat flour, baking powder, cinnamon, and salt.
    3. Stir until batter is well mixed.
    4. Pour batter into a microwave-safe bowl or coffee mug.
    5. Microwave for 1 ½ - 2 minutes until the cake is set. Be sure not to overcook your cake.

    RECIPE SUBSTITUTIONS

    OAT FLOUR 

    All-purpose flour or whole wheat flour can be used. 

    LOW-FAT 

    For a lower-fat protein brownie, use 2 egg whites in place of the 1 whole egg. 

    VEGAN 

    For a vegan option, use one flax or chia egg in place of the egg.

    GLUTEN-FREE

    Oats are naturally gluten-free but may be processed near other foods containing gluten. Look for oat flour or oats that are certified gluten-free. 

    MOLASSES

    Honey or maple syrup can be exchanged for molasses if desired. 

    COCONUT OIL 

    Butter or olive oil can be used in place of coconut oil. 

    BATTER ADD-INS 

    Feel free to add up to 1 tablespoon of the following to your carrot cake batter before baking. 

    • Raisins
    • Nuts
    • Coconut
    • Pineapple chunks
    • Dates

    MUG CAKE TOPPINGS

    • Homemade Cinnamon Whipped Cream
    • Cream cheese frosting
    • Pecans
    • Walnuts 
    • Dash of cinnamon
    • Coconut flakes
    • Freshly grated carrots

    CAN YOU BAKE THIS MUG CAKE IN THE OVEN INSTEAD OF IN A MICROWAVE?

    Whether you don’t have a microwave or prefer not to use one, this mug cake recipe can easily be baked in the oven. Pour your mug cake batter into an oven-safe dish and bake at 350 degrees Fahrenheit for 8 minutes or until a toothpick comes out clean. 

    EXPERT TIPS

    MICROWAVE COOKING TIME

    Microwaves may vary in their cooking time. Start with 60 seconds and adjust as needed. Cook longer for a more cake-like brownie and shorter for a more moist texture.

    Ingredients
      

    • ⅓ cup oat flour
    • ½ teaspoon baking powder
    • ¼ teaspoon salt
    • ½ teaspoon cinnamon
    • 1 tablespoon molasses
    • 1 egg
    • 3 tablespoons shredded carrots freshly grated is best
    • 1 tablespoon coconut oil melted

    Instructions
     

    • In a small bowl mix together oat flour, cinnamon, salt, and baking powder
    • Stir in grated carrots, egg, vanilla, molasses, and coconut oil.
    • Once ingredients are mixed well, pour cake batter into a microwave safe mug or dish.
    • Cook mug cake in the microwave for 90 seconds. Some microwaves cook differently than others you may need to adjust your cooking time.
