Incredibly Moist Carrot Mug Cake

This incredibly moist carrot mug cake is a delicious treat that is easy to whip up and ready in just a couple of minutes. And, since this carrot cake is made with oat flour, it’s naturally gluten-free and healthier than traditional mug cakes.

Ingredients
  

  • cup oat flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon
  • 1 tablespoon molasses
  • 1 egg
  • 3 tablespoons shredded carrots freshly grated is best
  • 1 tablespoon coconut oil melted

Instructions
 

  • In a small bowl mix together oat flour, cinnamon, salt, and baking powder
  • Stir in grated carrots, egg, vanilla, molasses, and coconut oil.
  • Once ingredients are mixed well, pour cake batter into a microwave safe mug or dish.
  • Cook mug cake in the microwave for 90 seconds. Some microwaves cook differently than others you may need to adjust your cooking time.

Notes

OVEN BAKED INSTRUCTIONS

Pour your mug cake batter into an oven-safe dish and bake at 350 degrees Fahrenheit for 8 minutes or until a toothpick comes out clean.

 

BATTER ADD-INS 

Feel free to add up to 1 tablespoon of the following to your carrot cake batter before baking.

  • Nuts
  • Coconut
  • Pineapple chunks
  • Dates

  • Whipped cream
  • Homemade cinnamon whipped cream
  • Cream cheese frosting
  • Pecans
