    Recipe Instructions

    1. Preheat your oven.
    2. Line a muffin pan with muffin liners
    3. Mash your bananas with a fork or potato masher or fork in a large mixing bowl.
    4. Stir melted coconut oil, Greek yogurt, eggs, maple syrup, lemon juice and vanilla with the mashed bananas.
    5. Add dry ingredients to the wet mixture and stir until the muffin batter is mixed and the oat flour is incorporated. Be careful to not overmix.
    6. Fold in halved blackberries.
    7. Pour batter into muffin pan.
    8. Bake for 15-20 minutes or until a toothpick comes out clean when testing for doneness.

    • 1 ½ cups blackberries fresh or frozen, halved
    • 2 bananas very ripe
    • 2 eggs
    • ½ cup maple syrup or honey
    • ¼ cup plain Greek yogurt
    • 1.5 tablespoons lemon juice freshly squeezed is best
    • ¼ cup coconut oil melted
    • 1 teaspoon vanilla
    • 2 ½ cups oat flour
    • 2 teaspoons baking powder
    • ½ teaspoon baking soda
    • ½ teaspoon salt

    Instructions
     

    • Preheat your oven to 350 degrees Fahrenheit 
    • Line a muffin pan with muffin liners
    • Mash your bananas with a fork or potato masher in a large mixing bowl
