Ingredients
  

  • 1 ½ cups blackberries fresh or frozen, halved
  • 2 bananas very ripe
  • 2 eggs
  • ½ cup maple syrup or honey
  • ¼ cup plain Greek yogurt
  • 1.5 tablespoons lemon juice freshly squeezed is best
  • ¼ cup coconut oil melted
  • 1 teaspoon vanilla
  • 2 ½ cups oat flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt

Instructions
 

  • Preheat your oven to 350 degrees Fahrenheit 
  • Line a muffin pan with muffin liners
  • Mash your bananas with a fork or potato masher in a large mixing bowl

  • Stir melted coconut oil, eggs, maple syrup, lemon juice and vanilla with the mashed bananas
    2 bananas, 2 eggs, ½ cup maple syrup, ¼ cup coconut oil, 1 teaspoon vanilla, ¼ cup plain Greek yogurt
  • Add dry ingredients to the wet mixture and stir until the muffin batter is mixed and the oat flour is incorporated. Do not over mix.
    2 ½ cups oat flour, ½ teaspoon salt, 2 teaspoons baking powder
  • Fold in halved blackberries. Do not overmix.
  • Bake at 350 degrees Fahrenheit for 15-20 minutes or until a toothpick comes out clean when testing for doneness. 

Notes

Substitutions: 
  • Blackberries: If blackberries are unavailable, you can substitute them with other berries such as blueberries, raspberries, or strawberries. Frozen berries can also be used in place of fresh ones.
  • Greek Yogurt: For a dairy-free alternative, opt for coconut yogurt, almond yogurt, or any other non-dairy yogurt of your choice.
  • Coconut Oil: You can substitute coconut oil with melted butter or another type of oil like olive oil or avocado oil.
  • Oat Flour: If you don't have oat flour, you can make your own by grinding rolled oats in a blender or food processor. Additionally, you could use other gluten-free flours like almond flour or a gluten-free all-purpose flour blend.
