    INGREDIENTS

    • 1 - Head cauliflower washed and cut into florets
    • 1 teaspoon salt
    • ยผ teaspoon pepper
    • ยฝ teaspoon garlic powder
    • 1 cup shredded cheddar cheese
    • 3 slices bacon chopped and cooked
    • Green onions or chives chopped for garnish (optional)

    HOW TO MAKE TWICE BAKED LOADED CAULIFLOWER

    1. Season cauliflower florets in olive oil, season with salt, pepper, and garlic powder.
    2. Roast in the oven until the cauliflower is tender and slightly charred. It's important to not overcook the cauliflower. You want it to be fork-tender, slightly charred, but not mushy.
    3. Top with crispy, salty bacon and shredded cheddar cheese.
    4. Bake again until the cheese is deliciously melty. Then finish off these loaded cauliflower florets with scallions or chives.

    HOW TO SERVE

    Twice-baked loaded cauliflower should be served warm. It's delicious by itself or drizzled with ranch or blue cheese dressing. If you're watching your carbohydrate intake, be sure to use a low-carb dressing.

    For the ultimate indulgence, serve twice-baked loaded cauliflower warm, and enjoy it either on its own or drizzled with your favorite ranch or blue cheese dressing. If you're following a low-carb diet, make sure to opt for a low-carb dressing.

    HOW TO STORE

    Cauliflower tends to lose its texture when stored and is best consumed within two days when refrigerated. To reheat any leftovers, it's recommended to spread them out on a sheet pan and bake them in the oven at 350F for 5-10 minutes or until heated through. While reheating in a microwave is also an option, it may result in a mushier texture. So, to enjoy the delicious flavors and textures of twice-baked loaded cauliflower, make sure to store and reheat it correctly!

    CAN I STEAM MY CAULIFLOWER?

    Yes! Steam your cauliflower for 10 minutes or until fork-tender. Be careful, overcooking will turn your cauliflower mushy. Should this happen, just turn this recipe into a mashed loaded cauliflower! If using a steamer bag of cauliflower follow directions on the packaging. Be sure to drain well.

    CAN I USE FROZEN CAULIFLOWER?

    Frozen Cauliflower works too! And, at times, it can be more economical than fresh. And, sometimes the fresh cauliflower at the market just doesn't look great. If using frozen cauliflower, I recommend steaming over roasting. The most important things to remember are to not overcook the cauliflower and to drain off all the excess water.

    Ingredients
      

    • 1 tablespoon olive oil
    • 1 head cauliflower washed and cut into florets
    • 1 tsp salt
    • ยผ tsp pepper
    • ยฝ teaspoon garlic powder
    • 1 cup cheddar cheese freshly shredded off the block preferably
    • 3 slices bacon thick cut, diced and cooked.

    Instructions
     

    • Preheat your oven to 400ยฐF.ย 
    • Add the cauliflower pieces to a medium bowl with the olive oil and toss to coat.Spread the cauliflower out onto a baking sheet and season with the salt, pepper, and garlic powder.
    • Roast 15 to 20 minutes or until fork tender and slightly charred.
    • Remove from oven and top with shredded cheddar cheese and bacon. This can be done on the sheet pan or moved to a baking dish.
    • Return to oven and bake for 10 additional minutes or until cheese is melted.
    • Remove from oven. Finish with chives or green onion, optional.

    Notes

    • I recommend shredding the cheese from a block rather than using pre-shredded bagged cheese. The cheese will melt easier and tends to have much more flavor.
    • Frozen cauliflower in steamable bags can substituted for fresh cauliflower. Steam as directed on bag, drain well then follow the rest of the directions above.ย
