HOW TO MAKE SPICY ROASTED SWEET POTATOES

    1. Cut the potatoes into ½-inch cubes. Keeping your potato cubes all close to the same size will help them to cook evenly. Note: the smaller the sweet potato pieces, the quicker they will cook.
    2. Place sweet potato cubes on a rimmed baking sheet.
    3. Toss the potatoes in olive oil or avocado oil and south-western seasonings. Full seasoning recipe in recipe card below.
    4. Roast in the middle rack of your oven at 425 degrees Fahrenheit for 30 minutes.
    5. Flip halfway through (15 minutes into cooking) to be sure all sides are cooked evenly.
    6. Remove from the oven and enjoy all the smokey, spicy, caramelized sweet potato goodness!

    Expert Tip

Avoid overcrowding your baking sheet. It’s better to use two baking sheets than to have too many sweet potatoes on the pan.

ARE SWEET POTATOES HEALTHIER THAN REGULAR POTATOES?

Sweet potatoes are often thought of as being healthier than white potatoes, but in reality, both sweet potatoes and regular white potatoes can be a good source of nutrients and fiber.

White potatoes provide more potassium, and sweet potatoes contain more fiber, Vitamin A, and Vitamin C.

To read more about the health benefits of sweet potatoes, read this article from The Cleveland Clinic.

SHOULD YOU PEEL SWEET POTATOES FOR ROASTING?

To peel or not to peel? Personally, I like the texture, flavor, and extra nutrients from the sweet potato skins. But feel free to peel the skins or leave them on. Either way works, and it’s just a matter of preference.

    BEST VEGETABLE FOR MEAL PREP

Roasted Sweet Potato Cubes are a favorite vegetable among the meal prepping community. And for good a reason! They are super versatile and go with almost everything. Savory or sweet.

Breakfast, lunch, or dinner...roasted can take on many flavors, hold up well in the refrigerator, and reheat like a dream. These healthy spuds check all the boxes when it comes to clean eating and meal prepping!

    HOW TO STORE AFTER BAKING

Allow sweet potatoes to cool completely, then store in an airtight container for up to 4 days in the refrigerator.

CAN I USE REGULAR POTATOES INSTEAD OF SWEET POTATOES?

Absolutely! You won’t have the same smokey, spicy-sweet flavor that you get from sweet potatoes, but they’ll still be delicious.

Yukon Gold or red-skinned potatoes would be fantastic! But feel free to use whichever kind of potato you have on hand.

WHAT TO SERVE WITH SOUTH WESTERN ROASTED SWEET POTATOES
