Spicy South Western Roasted Sweet Potatoes

These Spicy Roasted Sweet Potatoes are crispy on the outside, tender on the inside, and packed with smoky South Western flavors! This amazing recipe calls for sweet potatoes to be cubed up, seasoned with Tex Mex spices, then oven-roasted to perfection!

Ingredients
  

  • 3 sweet potatoes large or medium size
  • 2 tablespoons olive oil can use avocado or coconut oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon oregano
  • ½ teaspoon red pepper flakes feel free to use 1 teaspoon of red pepper flakes for more spicy flavor.
  • ½ teaspoon garlic powder
  • ¼ teaspoon garlic salt
  • ½ teaspoon salt

Instructions
 

  • Preheat oven to 425 degrees Fahrenheit.
  • Cut the potatoes into ½-inch cubes. Keeping your potato cubes all close to the same size will help them to cook evenly. Note: the smaller the sweet potato pieces, the quicker they will cook.

  • Place sweet potato cubes on a rimmed baking sheet. 
  • Toss the potatoes in olive oil or avocado oil and south-western seasonings. 
    2 tablespoons olive oil, 1 teaspoon smoked paprika, 1 teaspoon chili powder, 1 teaspoon cumin, ½ teaspoon oregano, ½ teaspoon red pepper flakes, ½ teaspoon garlic powder, ¼ teaspoon garlic salt, ½ teaspoon salt
  • Roast in the middle rack of your oven at 425 degrees Fahrenheit for 30 minutes.
  • Flip halfway through (15 minutes into cooking) to be sure all sides are cooked evenly. 
  • Remove from the oven and enjoy all the smokey, spicy, caramelized sweet potato goodness!

Notes

SHOULD YOU PEEL SWEET POTATOES FOR ROASTING?

To peel or not to peel? Personally, I like the texture, flavor, and extra nutrients from the sweet potato skins. But feel free to peel the skins or leave them on. Either way works, and it’s just a matter of preference.

 

EXPERT TIP

Avoid overcrowding your baking sheet. It’s better to use two baking sheets than to have too many sweet potatoes on the pan. 

 

 

HOW TO STORE AFTER BAKING

Allow sweet potatoes to cool completely, then store in an airtight container for up to 4 days in the refrigerator.
