    Keto Roasted Brussels Sprouts

    This Keto Roasted Brussels Sprouts recipe is one of my favorite vegetable side dishes. They are yummy, healthy, and oh so addictive! I recommend making a double batch.

    These crispy brussels sprouts are not only quick and easy but low-carb and impressive enough to serve as a Holiday side dish. They are oven-roasted to a perfect crisp alongside salty bacon, minimal oil, and a little salt and pepper.

    For a long time, I thought I didn't like brussels sprouts. Then one night while having dinner with a friend, she insisted I give them one more chance. Let me tell you guys, she was right! How had I been missing out on these little flavor bombs? Something seriously magical happens when you roast these little green vegetables up with bacon…I said goodbye to the bitter, green, mushy vegetables I'd once eaten and hello to my new favorite side dish!

    Are Brussels Sprouts Keto Approved?

    They sure are! Brussels Sprouts are naturally keto-friendly with only 4.5g net carbs per cup making them a great low-carb vegetable to add to your diet.

    Recipe Details

    Wash, trim, and halve the brussels sprouts. Toss them with a bit of avocado oil. Then chop two pieces of thick-cut bacon. Spread out the brussels sprouts cut side down and add the bacon. Season with salt and pepper, then roast at a high temperature for about 20 minutes. Depending on the size of the sprouts, you may need to cook them a bit longer. I love it when they’re crispy with just the right amount of charred goodness. Give the sprouts a sprinkle of flakey sea salt once removed from the oven, and enjoy!

For a more "wow" presentation, once the brussels sprouts are done, top with juicy pomegranate seeds to add sweetness and a pop of color.  A ¼ cup serving of pomegranate seeds contains less than 5 grams of net carbs

    Ingredients
      

    • 1 ½ pound brussels sprouts washed and trimmed
    • 2 slices thick cut bacon chopped
    • 1 tablespoon avocado oil
    • sea salt and black pepper

    Instructions
     

    • Preheat oven to 425 F.
    • Slice the brussels sprouts in half, toss with drizzles of olive oil, chopped bacon, and salt and pepper, and spread on the baking sheet.
    • Roast 20 to 25 minutes or until tender and golden brown around the edges.
    • Remove from oven and sprinkle with a pinch of flakey sea salt and garnish with pomegranet seeds. (optional)
    • Serve immediately.

    Notes

    To reheat, place in 400F oven for 3-5 minutes being careful not to burn.

      This is the best way to prepare Brussel sprouts. I did not have any bacon so I used chopped pancetta, absolutely wonderful side dish.

      I was never a fan of sprouts, but since the brits are crazy for them and cultivate it at their allotments, I got to cook them - the people are so kind and sharing all sorts, so we always exchange whatever we're growing. I never thought of pomegranate, that might change my child's idea that sprouts are horrible:)))
