Friends, let me introduce you to my new favorite side dish…Hello, Stuffed Sweet Potato Casserole! Sweet potato casserole has long been a traditional holiday staple in our family, but I kinda thought this uber-rich dish (basically dessert) was due for a much-needed makeover.
Thanksgiving and Christmas dinners in 2021 may look a little different this year. If you’re expecting fewer people at your dinner table or are not able to travel, this scaled-down version of sweet potato casserole delivers all the traditional holiday flavors you love.

Preparing small batch portions for your smaller gatherings is not only easier but helps to keep leftovers and waste to a minimum. And, you’ll be spending less time in the kitchen and more time with family and friends. More time to be grateful for all of life’s blessings seems like a win to me.
CLEAN EATING THANKSGIVING
Sweet potatoes are, well…sweet. They don’t need a boatload of sugar to make them tasty. So, I lightened up the traditional casserole filling with just a touch of maple syrup, a dash of vanilla, and an egg. Then, I dialed back the brown sugar to only one tablespoon, added a bit of coconut oil, delicious pecans, rolled oats, and a lot of cinnamon to finish off the crumble topping.
So Easy. So Good.
HOW TO MAKE STUFFED SWEET POTATO CASSAROLE
Wash, dry, and place sweet potatoes on a lined tray. Bake the sweet potatoes at 400 F for 50 minutes or until soft. You may have to adjust the cooking time depending on the size of your potatoes.
Let the potatoes cool enough to handle then scoop out the filling and place it into a bowl. Be careful to leave some of the sweet potato flesh on the skin. This will help the potatoes hold their boat-like shape.
Mix together sweet potatoes, maple syrup, and the egg, then carefully scoop filling back into the skins.
Combine coconut oil, brown sugar, rolled oats, roughly chopped pecans cinnamon, and salt to make the pecan crumble topping. Evenly distribute the topping over the stuffed sweet potatoes.
Bake for 10-15 minutes at 350 F, until filling is warmed through and topping is golden. Watch carefully as to not burn the pecans.
Did I mention how good these stuffed spuds are?
These Stuffed Sweet Potato Casserole are so good I got TWO THUMBS UP from all three of my kiddos and one of my girls asked if she could have another for breakfast the next morning! HA! These stuffed potatoes will definitely be hitting our dinner table year-round.

Stuffed Sweet Potato Casserole
Ingredients
- 2 sweet potatoes
- 1 egg
- ½ teaspoon pure vanilla extract
- 2 tablespoon maple syrup
- 2 tablespoon coconut oil

- ½ teaspoon sea salt
- 2 tablespoon rolled oats
- ½ cup pecans roughly chopped

Instructions

Hi, Sheetal...great question! You could omit the egg altogether. The egg helps the potato mixture puff up a bit like a souffle. You could substitute 1/2 tbsp flaxseed or add in 1/3 cup of non-dairy or dairy yogurt to add creaminess. Thanks!

This sounds wonderful. I am really enjoying your recipes. They are different and healthy. This one has a little bit more sugar than I like. I might try cutting it back a little. But the combination of maple syrup and brown sugar on a sweet potato would be delicious. I do indulge in sugars once in a while. LOL

It's definitely a more decadent side dish. To cut down on the sugar more, I would leave out the maple syrup in the potato filling and cut the brown sugar topping in half. Hope this helps!

I haven't tried flaxseed as an egg replacement in this particular recipe. It should work just fine...I'd start with 1/2 tbsp for the sweet potato mixture and go from there. Let me know how it works out for you or if you have more questions.
