    Italian Chicken Skillet: A One-Pan, Healthy Dinner Your Whole Family Will Love

    If you're looking for a quick and easy dinner that's both healthy and delicious, look no further than Italian Chicken Skillet. This recipe is made entirely in one pan on the stovetop, making it perfect for busy weeknights when you don't want to spend hours in the kitchen. And the best part? It's a dish that the whole family will love.

    Made with chicken breasts, plum tomatoes, garlic, fresh mozzarella, and spices. This healthy chicken recipe is juicy, tender, and packed with flavor!

    RECIPE DETAILS 

    Italian Chicken Skillet is a one-pan, healthy dinner that is sure to be a hit with your whole family. This flavorful and satisfying dish is made with boneless, skinless chicken breasts, nutritious vegetables, and a blend of Italian seasonings, making it both delicious and nutritious. This delicious chicken dinner is quick, easy, and is a family favorite!

    HOW TO MAKE EASY ITALIAN CHICKEN DINNER VIDEO

    The boneless skinless chicken breasts are pounded to about ¼ inch thickness then seasoned with basil, oregano, salt, and red pepper flakes.  

    Pan-sear the chicken, flipping once halfway through, then place on a plate to rest while the tomatoes cook.

    While the chicken is cooking, slice the plum tomatoes and chop the garlic. Toss with the remaining spice and salt. Add to the skillet and cook just for about 3 minutes until tomatoes are soft.

    Slice the fresh mozzarella. 

    Add chicken back to the hot skillet with the sautéed tomatoes and top with sliced fresh mozzarella. Once mozzarella has melted, plate and enjoy!

    Italian Chicken with Tomatoes and Fresh Mozzarella

    Ingredients
      

    • 4 breast boneless skinless chicken pounded to ¼ inch thichness
    • 3 cloves garlic
    • 4 cups plum tomatoes fresh
    • 2 teaspoon oregano
    • 1 teaspoon basil
    • 2 teaspoon salt
    • ¼ tsp red pepper flakes
    • 1 ball mozzarella fresh

    Instructions
     

    • Mix together basil, oregano, salt, and red pepper flakes.
    • Season both sides of the chicken breasts with half of the seasoning.

    • Slice mozzarella into slices.
    • Chop garlic then slice tomatoes in half. Season the garlic and tomatoes with the remaining spices.
      Fresh sliced plum tomatoes, chopped garlic, and herbs.
    • Heat a large non-stick skillet over medium high heat and add a drizzle of extra virgin olive oil. Once hot and the oil is shimmery, add chicken and cook, undisturbed for 7-8 minutes, or until golden-browned (or blackened if you prefer) on one side. Turn chicken over and cook for approximately 5-7 more minutes or until chicken is cooked through.
    • Remove chicken from skillet and let rest on a plate.
    • Add a drizzle of olive oil to the pan and add the tomatoes and garlic. Cook on medium heat for about 3 minutes or until tomatoes have softened.
    • Add chicken back to skillet and top with sliced mozzarella cheese.
    • Once cheese is gooey and melted, remove from heat and serve.
