    This chicken burrito skillet dinner comes together in one pan to make a quick, easy, and healthy dinner the whole family will love! This simple recipe has everything you love in a burrito but is made in a skillet!

    Simple to make and smothered with gooey, melty, cheesy goodness and topped with fresh tomatoes, creamy avocados, or spicy jalapeños. This is a healthy chicken dinner that doesn't skimp on flavor!

    WHY THIS CHICKEN SKILLET RECIPE IS SO GOOD?

    Easy: This is a quick burrito recipe that's easy to pull together, with just a few ingredients and minimal prep work. And, it's made in one pot making clean-up a breeze!

    Healthy: Juicy boneless skinless chicken breast is packed with nutrient-dense vegetables and healthy fats. This chicken skillet meal provides a great protein punch and is the perfect one-pan meal that will fill up even the hungriest teenager or family member!

    Customizable: Add all your favorite toppings, keep everyone happy! No chicken breast on hand? Use lean ground beef, ground chicken, or ground turkey as a substitute!

    Budget-Friendly: Just because you're on a budget doesn't mean you have to skimp on flavor. This Mexican skillet dinner serves a crowd while only using two chicken breasts and black beans to create a healthy filling meal that doesn't break the bank. This is the perfect weeknight meal!

    HOW TO MAKE MEXICAN CHICKEN SKILLET

    1. CHOP: Dice the onion, garlic, and tomatoes, then chop the chicken breast into 1-inch pieces.
    2. COOK: In a large skillet or cast iron pan, cook the chicken until almost done, then add the onion and garlic until they are softened. Next add the canned tomatoes, black beans, corn, spices, and water. Let the burrito mixture simmer until the water has cooked down and the mixture is thickened.
    3. Top: Add shredded cheese and give it a few minutes to do its gooey cheesy thing. Next, top with diced Roma tomatoes and a diced avocado.
    4. Serve: This skillet dinner can be served up with sides like Spanish rice, tortilla chips, or tortillas.

    What meat can be substituted for chicken breasts in this burrito skillet meal?

    A pound to a pound and a half of ground chicken, ground turkey, or lean ground beef would all work well in this recipe.

    Are skillet meals a good meal prep option?

    Yes! This chicken skillet meal is a great meal prep option. Simply portion out your meals into containers and refrigerate for up to 3 days or freeze until ready to eat. When meal prepping, I recommend reheating your meal first and then adding the diced tomatoes and avocados.

    Is burrito skillet dinner freezer-friendly?

    Definitely! This recipe feeds a crowd, so if you have a smaller family you could easily eat half and freeze the other half. To thaw, move the frozen meal to the refrigerator the night before. To reheat, microwave until heated through or bake, covered at 350 for 15 minutes or until hot.

    Chicken Burrito Skillet Dinner

    Ingredients
      

    • 1.5 lbs chicken breast
    • 1 can black beans
    • 1 can diced tomatoes
    • 1 can corn
    • 1 onion diced
    • 2 cloves garlic minced
    • 1 tablespoon chili powder
    • 1 tablespoon cumin
    • 1 tablespoon oregano
    • 1 tablespoon smoked paprika
    • 1 teaspoon salt
    • ½ teaspoon crushed red chili flakes
    • 1 cup water

    Instructions
     

    • Chop the chicken breast into 1" pieces and set aside
    • Dice the onion, garlic, avocado, and Roma tomatoes
    • Heat a lage skillet or cast iron pan with a small amount of olive oil. Add chicken breast pieces and cook.
    • When chicken is almost done, add the onion and garlic to the skillet.
    • Once the chicken is cooked through and the onions and garlic have softened, add the canned tomatoes, black beans, corn, spices, and water. Stir everything together and simmer on medium-low heat.
    • Let everything simmer, stirring occasionally until the water has cooked down and the mixture has thickened.
    • Top with shredded cheese. Once the cheese is melty, add the tomatoes and avocados.

    IS THIS RECIPE FREEZER-FRIENDLY?

    • To thaw move from the freezer to the refrigerator the night before. Reheat in the microwave or in the oven at 350F, covered, for 15 minutes or until heated through. 
     

    HOW LONG CAN I STORE THIS IN THE REFRIGERATOR?

    • I don't recommend storing it in the refrigerator longer than three days.
