Italian Chicken with Tomatoes and Fresh Mozzarella

This delicious Italian Chicken Skillet dinner is a quick and easy one-pan stovetop dinner that the whole family will love.

Ingredients
  

  • 4 breast boneless skinless chicken pounded to ¼ inch thichness
  • 3 cloves garlic
  • 4 cups plum tomatoes fresh
  • 2 teaspoon oregano
  • 1 teaspoon basil
  • 2 teaspoon salt
  • ¼ tsp red pepper flakes
  • 1 ball mozzarella fresh

Instructions
 

  • Mix together basil, oregano, salt, and red pepper flakes.
  • Season both sides of the chicken breasts with half of the seasoning.

  • Slice mozzarella into slices.
  • Chop garlic then slice tomatoes in half. Season the garlic and tomatoes with the remaining spices.
    Fresh sliced plum tomatoes, chopped garlic, and herbs.
  • Heat a large non-stick skillet over medium high heat and add a drizzle of extra virgin olive oil. Once hot and the oil is shimmery, add chicken and cook, undisturbed for 7-8 minutes, or until golden-browned (or blackened if you prefer) on one side. Turn chicken over and cook for approximately 5-7 more minutes or until chicken is cooked through.
  • Remove chicken from skillet and let rest on a plate.
  • Add a drizzle of olive oil to the pan and add the tomatoes and garlic. Cook on medium heat for about 3 minutes or until tomatoes have softened.
  • Add chicken back to skillet and top with sliced mozzarella cheese.
  • Once cheese is gooey and melted, remove from heat and serve.

Notes

What to serve with Italian chicken skillet

Just add crusty bread to soak up all that yummy tomato sauce. Or, slice the Italian chicken up and pile it on top of angel hair pasta.
For a low-carb side consider a delicious side salad, roasted green beans, or steamed broccoli.
