OATMEAL BAR INGREDIENTS

OATS
Oats have long been considered to be a no-brainer due to their health benefits. Diets that include oats and whole grains are associated with heart health benefits and lower cholesterol.
Be sure to use certified gluten-free oats if you need gluten-free foods.
MAPLE SYRUP
Using a natural sweetener like maple syrup or honey is always my preference over highly processed sugar.
While using a natural sweetener is a healthier alternative to a highly processed refined sugar, at the end of the day, maple syrup is still sucrose and needs to be eaten in moderation.
FLAX SEEDS
Flaxseed is commonly used to help digestive health, lower total blood cholesterol, and LDL cholesterol levels, which may help reduce the risk of heart disease.

ALMONDS
Almonds are rich in Vitamin E, Fiber, Biotin, Calcium, Phosphorus, and Magnesium.
Almonds have been suggested to reduce heart disease risk by lowering total and LDL cholesterol, and exerting anti-inflammatory and antioxidant effects, decrease inflammation, promote healthy blood vessels, and reduce insulin resistance.
BLUEBERRIES
Blueberries have been referred to as the king of antioxidants and with good reason! They rank the highest of any fruit for antioxidants, are low in calories, and high in fiber and vitamin C.
HOW TO MAKE BLUEBERRY OATMEAL BARS
STEP 1: MAKE THE OAT AND ALMOND CRUMBLE
In a food processor or high-powered blender, process 1 ½ cups of oats, flax seeds, and almonds into flour.
Next, combine the processed flour, remaining cup of oats, banana, maple syrup, and water into a bowl. Stir together until everything is combined and crumbly.
Press a little more than half of the mixture into an 8x8 inch pan lined with parchment paper, then set the rest of the oatmeal crumble in the fridge for later.
STEP 2: MAKE THE BLUEBERRY FILLING
Use a fork to mash and break down the blueberries just a bit. Stir in the lemon zest and starch of your choice. Pour blueberry filling over oat crust.
STEP 3: ASSEMBLE THE OATMEAL BARS & BAKE
Sprinkle the remaining oatmeal crumble mixture over the top of the blueberry mixture and bake for 25-30 minutes until filling is bubbly and the oatmeal crumble is slightly golden brown.
Cool and cut into 8 bars or 16 small squares. Enjoy!
EXPERT TIPS:
- Blueberries can vary widely in their sweetness. I recommend tasting a few before you start this recipe. If they are on the bitter side, add a tablespoon or two of maple syrup or honey to the blueberry mixture.
- They are also easily frozen. Just individually wrap each bar and freeze for up to two months as a quick meal prep option. To thaw, move them to the refrigerator the night before or remove wrapping and pop in the microwave until warm.

Healthy Blueberry Oatmeal Breakfast Bars
Ingredients

- Place a rack in the center of your oven and heat to 350 degrees F.
- Line an 8x8-inch baking pan with parchment paper so that the paper overhangs two sides.
- In a food processor or high-powered blender, process 1 ½ cups of oats, flax seeds, and almonds into a fine flour consistency.
- Combine the oat/almond flour mixture, remaining cup of oats, mashed banana, maple syrup, and water into a bowl. Stir together until everything is combined and crumbly.
- Press a little more than half of the oat mixture into an 8x8 inch pan lined with parchment paper, then set the rest of the crumble in the fridge for later.
- Pour blueberries into a bowl and use a fork to mash and break down the blueberries just a bit. Stir in the lemon zest and starch of your choice.
