Healthy Blueberry Oatmeal Breakfast Bars

These Blueberry Oatmeal Breakfast Bars are refined-sugar-free, kid-approved, and super easy to throw together or meal prep the night before. You'll want to keep these breakfast bars on hand for a quick, healthy breakfast, lunch box treat, or an afternoon snack.

Ingredients
  

  • 2 ½ Cups Rolled Oats
  • ¾ Cup Very Ripe Mashed Banana
  • ¼ Cup Flax Seed
  • ¼ teaspoon Course Salt
  • 1 tablespoon Water
  • 2 tablespoon Maple Syrup
  • ½ Cup Almonds
  • 2.5 Cups Fresh or Frozen Blueberries
  • 1 tablespoon Corn Starch, Tapioca Starch, or Arrorowroot Starch
  • Zest of one Lemon

Instructions
 

  • Place a rack in the center of your oven and heat to 350 degrees F.
  • Line an 8x8-inch baking pan with parchment paper so that the paper overhangs two sides.
  • In a food processor or high-powered blender, process 1 ½ cups of oats, flax seeds, and almonds into a fine flour consistency.
  • Combine the oat/almond flour mixture, remaining cup of oats, mashed banana, maple syrup, and water into a bowl. Stir together until everything is combined and crumbly.
  • Press a little more than half of the oat mixture into an 8x8 inch pan lined with parchment paper, then set the rest of the crumble in the fridge for later.
  • Pour blueberries into a bowl and use a fork to mash and break down the blueberries just a bit. Stir in the lemon zest and starch of your choice.
  • Pour blueberries over the oat crust.
  • Sprinkle the remaining crumble mixture over the top of the blueberry mixture.
  • Bake for 25-30 minutes until filling is bubbly and the oatmeal crumble is slightly golden brown.
  • Cool and cut into 8 bars or 16 small squares.

Notes

  • Blueberries can vary widely in their sweetness. I recommend tasting a few before starting this recipe.  If they are on the bitter side you can add a tablespoon of maple syrup to the blueberry mixture before spreading it on the oat crust.
  • You could individually wrap these and freeze them for up to two months as a quick breakfast or snack meal prep option. To thaw, move to the refrigerator the night before or remove wrapping and pop in the microwave in 20-second increments until warm.
