HOW TO MAKE MEXICAN CHICKEN SKILLET
- CHOP: Dice the onion, garlic, and tomatoes, then chop the chicken breast into 1-inch pieces.
- COOK: In a large skillet or cast iron pan, cook the chicken until almost done, then add the onion and garlic until they are softened. Next add the canned tomatoes, black beans, corn, spices, and water. Let the burrito mixture simmer until the water has cooked down and the mixture is thickened.
- Top: Add shredded cheese and give it a few minutes to do its gooey cheesy thing. Next, top with diced Roma tomatoes and a diced avocado.
- Serve: This skillet dinner can be served up with sides like Spanish rice, tortilla chips, or tortillas.

Chicken Burrito Skillet Dinner
Ingredients
- 1.5 lbs chicken breast
- 1 can black beans
- 1 can diced tomatoes
- 1 can corn
- 1 onion diced
- 2 cloves garlic minced
- 1 tablespoon chili powder
- 1 tablespoon cumin
- 1 tablespoon oregano
- 1 tablespoon smoked paprika
- 1 teaspoon salt
- ½ teaspoon crushed red chili flakes
- 1 cup water
Instructions
- Chop the chicken breast into 1" pieces and set aside
- Dice the onion, garlic, avocado, and Roma tomatoes
- Heat a lage skillet or cast iron pan with a small amount of olive oil. Add chicken breast pieces and cook.
- When chicken is almost done, add the onion and garlic to the skillet.
- Once the chicken is cooked through and the onions and garlic have softened, add the canned tomatoes, black beans, corn, spices, and water. Stir everything together and simmer on medium-low heat.
- Let everything simmer, stirring occasionally until the water has cooked down and the mixture has thickened.
- Top with shredded cheese. Once the cheese is melty, add the tomatoes and avocados.
