Traditionally found in Korean Cafes and made with whole dairy milk, sugar, and strawberries, this popular drink can easily be made at home.
Strawberry Milk is a super simple recipe made with freshly chopped strawberries and quick homemade strawberry syrup. The cold syrup and chopped strawberries are poured into the bottom of a glass or glass bottle, then milk is slowly poured on top of the syrup. A straw is added and used to stir the milk and strawberries. Sometimes ice or whipped cream is added to the beverage.

How To Make Homemade Strawberry Syrup
- Add strawberries to a food processor, blender, or blender and pulse a few times until they are almost pureed.Add pureed strawberries and chopped strawberries to a small saucepan with honey or sugar and a simmer.
- Chop additional strawberries, so your strawberry syrup has those amazing chunks throughout your syrup.Simmer the strawberry syrup until it begins to thicken and has become syrup-like. Be careful not to overcook this mixture, or it will thicken into a strawberry jam.
- Cool the syrup in the refrigerator until it is completely chilled. Failing to chill your syrup could cause the milk to curdle.
A note about fresh strawberries: Strawberries vary in their sweetness depending on how ripe they are when they are picked. Feel free to add more honey or sugar if the syrup isn’t quite sweet enough.
How To Make Korean Strawberry Milk At Home
- Pour chilled homemade strawberry syrup into the bottom of a glass
- Tilt and swirl the glass to distribute the strawberry syrup onto the sides of the glass
- If desired, add ice.
- Slowly pour milk over the top of your strawberry syrup
- Add a straw and stir.
RECIPE SUBSTITUTIONS
Honey
You can easily swap out the honey for a more traditional sweetener, sugar, found in most Korean Strawberry Milk recipes. Here are other sweeteners you can use:
- Coconut sugar
- Raw sugar
- Maple syrup
- While you can use maple syrup to sweeten your strawberries, I’ve found that the maple flavor is too overpowering for me and takes away from the freshness of the strawberry flavors.
Fresh Strawberries
Frozen strawberries are an easy swap for this recipe. And, if strawberries aren’t in season, frozen may be the better choice.
Dairy Milk
Strawberry milk is just as delicious when using plant-based milk. I would recommend using creamier dairy-free milk like oat milk or coconut milk, but you can use any of these vegan kinds of milk:

- Almond Milk
- Cashew Milk
Optional Strawberry Milk Toppings

No-Cook Version - Korean Inspired Strawberry Milk can be made by macerating fresh strawberries and sugar. Simply mash the strawberries in a shallow dish and mix with sugar on a 1:1 basis. Let the strawberries and sugar sit out at room temperature for one hour, and then chill. While macerated strawberries are good in strawberry milk, they won’t develop the same depth of flavor and sweetness you get from using a homemade strawberry syrup.
The acid in strawberries can make milk curdle if mixed ahead of time or If your strawberry syrup is still warm. To prevent your milk from curdling, use cold ingredients and keep strawberry syrup and milk separate until you are ready to drink your Korean Style Strawberry Milk.

Best Homemade Korean Strawberry Milk
Ingredients
- 3 cups strawberries
- 3 tablespoons honey or sugar
- 2 cups milk dairy or plant based
Instructions
- Puree 2 cups of strawberries in a blender, food processor, or mashed with a fork.
- Chop remaining cup of strawberries into small pieces
- In a small saucepan, add the pureed strawberries, chopped strawberries, and honey (or sugar).
- Slowly heat the strawberries and gently simmer for about 3 minutes or until the mixture begins to thicken to a syrup like consistency. Be careful not to overcook and thicken to a jam.
- Remove syrup from heat and chill strawberry syrup completely in the refrigerator.
- Take two glasses and add half of the chilled strawberry puree. Tilt and swirl the glass to distribute the strawberry syrup onto the sides of the glass
- If desired, add ice. Slowly pour 8 oz of milk over the strawberry syrup.
- Serve immediately with a straw to mix the milk and strawberry syrup.
