Ingredients

  • 1 pound Carrots cut into fry shapes
  • 3 tbsp extra virgin olive oil
  • 2 tsp garlic powder
  • ½ cup parmesean cheese
  • kosher salt and black pepper to taste

Spicy Sriracha Dipping Sauce

  • ½ cup non-fat Greek yogurt
  • 1 tablespoon Sriracha sauce less if you like a milder heat
  • 1 teaspoon honey

Instructions

  • Preheat oven to 400 degrees F
  • Start by peeling the carrots and cutting off their ends. I then cut my carrots in half crosswise and then cut them into fry-like pieces.
  • Place the carrots on a large baking sheet and toss with olive oil, parmesean cheese, garlic powder, and a large pinch each of salt and pepper. Spread the fries out in an even layer being careful to overcrowd the pan. Divide the fries between 2 baking sheets if needed.
  • Bake for 15 minutes then gently flip and return to the oven and bake for 15 minutes more. You want the carrots to be tender, yet crisp. Optional: trun on convection setting for the last 5 minutes of baking to help crips up the fries. Watch careful during this period as they start browning quickly.
  • Remove the fries from the oven and sprinkle with a bit of flakey sea salt and a bit more parmesan if desired.
  • Serve and enjoy!

SPICY SIRACHA DIPPING SAUCE

  • To make the Sriracha dipping sauce, mix all ingredients in a bowl until blended and creamy. Season with salt.

MEAL PREP TIP

For quicker meal prep, cut carrots ahead of time and store them in the refrigerator.

AIR FRYER INSTRUCTIONS

I find it easier to bake mine in the oven, but feel free to air fry your carrot fries.  Be sure not to pile them on top of each other or they won't crisp up! Air fry them 350 degrees Fahrenheit for 15-20 minutes. For evenly crispy carrot fries, give the air fryer basket a good shake about halfway through cooking.
