Roasted Vegetable Salad with Feta and Fresh Apples

Ingredients
  

  • ½ cup dry quinoa
  • ¾ cup water
  • 2 medium carrots peeled and cut into ½ inch pieces
  • 1 large sweet potato cut into ½-inch pieces (peel optional)
  • 4 cloves garlic minced
  • ½ teaspoon rosemary
  • ½ tsp sea salt
  • ¼ tsp black pepper
  • 3 oz feta cheese
  • 4 cups salad greens optional
  • 2 medium apple chopped

Honey Mustard Vinegrette

  • ¼ cup extra virgin olive oil
  • 3 tablespoon honey
  • 2 tablespoon dijon mustard
  • 2 tbsp apple cider vinegar
  • 1 clove garlic minced

Instructions
 

Make the Vinaigrette:

  • Combine all vinaigrette ingredients in a small bowl.
  • Whisk until blended and set aside

Roast the Vegetables:

  • Preheat oven to 425 degrees F (220 C)
  • Place sweet potatoes and carrots in a single layer on a sheet pan. Drizzle with olive oil and season with rosemary, salt, and pepper.
  • Roast for 10 minutes, then add minced garlic. Gently toss and continue roasting until vegetables are tender and golden, 20–30 minutes, tossing occasionally.

Cook the Quinoa:

  • Combine quinoa and water in a saucepan. Bring to a boil, then reduce heat to low.
  • Cover and cook for about 20 minutes, or until water is absorbed.
  • Fluff with a fork.

Assemble the Salad:

  • In a large bowl, toss roasted vegetables, garlic, quinoa, apples, feta, and ⅓ of the vinaigrette.
  • Serve over salad greens (optional) and drizzle with remaining vinaigrette.

Notes

Tip: For air fryer: Cook vegetables at 350°F (175°C) for 15–20 minutes, shaking halfway through. Do not overcrowd the basket.
