Easy Sautéed Sweet Potatoes

These easy sautéed sweet potatoes are perfectly crispy on the outside, tender on the inside, and a quick side dish for those busy weeknight dinners!

Ingredients
  

  • 3 sweet potatoes about 4 cups of cubed sweet potatoes
  • 1 ½ tablespoons avocado oil olive oil or vegetable oil
  • ½ teaspoon black pepper more or less to taste
  • ½ teaspoon salt more or less to taste

Instructions
 

  • Cut the potatoes into ½-inch cubes. Keeping your potato cubes all close to the same size will help them to cook evenly. Note: the smaller the sweet potato pieces, the quicker they will cook.

  • Heat a large heavy-bottomed or cast iron pan and add oil. 
    1 ½ tablespoons avocado oil
  • Add diced sweet potatoes to the skillet, stir them every few minutes until the potatoes are fork-tender. This should take about 12 minutes.

  • Once done, toss the sautéed potatoes with salt and pepper or the seasoning of your choice.

Notes

Expert Tip

To prevent potatoes from sticking or becoming mushy, avoid overcrowding your pan. If you're doubling the recipe for meal prep, It’s better to use two skillets than to have too many sweet potatoes on the pan.
