Easy Protein Blueberry Muffin Recipe

They are super quick and easy to make, packed with healthy, good-for-you ingredients, and are the perfect protein-packed blueberry muffin that just happens to be gluten-free!

Ingredients
  

  • 1 cups blueberries fresh or frozen
  • 2 eggs
  • ½ cup honey or maple syrup
  • ½ cup coconut oil melted
  • 1 teaspoon vanilla
  • ¾ cups oat flour
  • ¾ cups whey protein powder vanilla flavored
  • ½ cup non-fat plain Greek Yogurt
  • 1 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Instructions
 

  • Preheat your oven to 400 degrees Fahrenheit 
  • Line a muffin pan with muffin liners
  • Stir melted coconut oil, Greek yogurt, eggs, honey, and vanilla together
    2 eggs, ½ cup honey, ½ cup coconut oil, 1 teaspoon vanilla, ½ cup non-fat plain Greek Yogurt
  • Add dry ingredients to the wet mixture and stir until the muffin batter is mixed and the oat flour is incorporated. Do not over mix.
    ¾ cups oat flour, ¾ cups whey protein powder
  • Stir in blueberries. Do not over mix.
    1 cups blueberries
  • Bake at 400 degrees Fahrenheit for 15-20 minutes or until a toothpick comes out clean when checking for doneness. 

Notes

If using frozen blueberries, thaw first and drain off any excess liquids. 
Whole wheat flour or regular white all purpose flour may be used in place of oat flour. 
Feel free to use store bout oat flour or make your own by adding old-fashioned rolled oats to a blender or food processor and process until oats turn into a fine flour-like consistency.
