Roasted Vegetable Quinoa Salad with Feta & Fresh Apples

Step 1 Make the Honey Mustard Vinaigrette by mixing these ingredients together.  – extra virgin olive oil – honey – dijon mustard – apple cider vinegar – minced garlic

Step 2 In a hot oven, roast the sweet potatoes and carrots with olive oil and seasoning blend. 

Step 3 Cook quinoa according to the package instructions and set aside. 

Step 4 Toss the cooked quinoa, roasted vegetables, chopped apple, fresh chunks of feta cheese with the homemade vinaigrette.
